Recipe Review – Garlic Parmesan Crusted Salmon and Asparagus

The first recipe I’ve chosen to review is one that I have actually cooked a few times now. It was my new recipe for January, and I fell in love with it. Not only is it absolutely delicious, but it is very simple to make while still looking fancy.

The basics of the recipe are that you get four pieces (patties? fillets?) of salmon and some asparagus, cover them in garlic and parmesan and bake it. I, now, buy the frozen bags of salmon from Wal-mart. The first time I tried this, I bought a giant slab of salmon and had to skin it and cut it up – not fun at all. So, live and learn, I now buy the already cut up and skinned salmon. It is definitely worth it. Also, quick tip, don’t forget to wash your asparagus before you use it. I’m pretty sure I’ve forgotten that step every time except this most recent one. It just strengthened our immune system – it’s fine.

So, here’s the step by step of how it went for me. I will not be giving you exact measurements because (A) you really need to go check the recipe out for yourself (link at the end of the this article) and (B) I didn’t really measure anything anyway because more cheese is always better.

The first thing you will notice is that the pan is covered in parchment paper. DO NOT SKIP THIS STEP. The first time I made this, I didn’t think that part was necessary, and the pan was a nightmare to clean. Side note, I have now fallen in love with parchment paper for all things on a cookie sheet, including cookies. It’s the best! Anyways, this picture was taken after I thawed the salmon in the microwave (remember, I buy them frozen), washed the asparagus, covered it all in salt and pepper (both sides for the salmon), then covered it in minced garlic (I buy the giant jars that last forever). However, you might notice that there is an important ingredient missing from my Garlic PARMESAN Crusted Salmon and Asparagus. That’s right, I didn’t sprinkle it with shredded parmesan. So, I put it in the oven like this for about seven minutes, at which time I shouted, “Parmesan!”, rushed over, took it out of the oven and then sprinkled the parmesan on. It still had about ten minutes, so we were okay.

This is seven minutes into cooking when I sprinkled (okay covered) it with parmesan. This is how it should have looked before it went into the oven the first time. Note that this is my third or fourth time making this dish, and I still forgot one of the main ingredients. I mean, it’s in the name! So, at this point it went back in the oven.

       

Here’s the final product – fully cooked and covered in parmesan.  I like this recipe for a few reasons. First, it only has six ingredients, and that is including the salt and pepper. Additionally, it takes less than thirty minutes to cook – start to finish, including defrosting the salmon. Most importantly, it is delicious. I crave this recipe now. As an added bonus, it is healthy, and I feel fancy cooking it.
